Strawberry Chia Seed Pudding

This is the kind of breakfast that makes you feel like you’ve got your shit together even if your laundry’s been sitting in the dryer for three days. (It’s fine in there.) It’s creamy, lightly sweet, packed with strawberries, and takes almost no effort. Plus chia seeds are tiny nutritional powerhouses packed with fibre and omegas- they definitely help to keep things moving if you get what I’m saying…you get what I’m saying…


What Goes In It

  • ½ lb fresh strawberries

  • 1 can full-fat coconut milk

  • ½ cup vanilla Greek yogurt

  • 2–3 tbsp maple syrup (depending on your sweetness preference)

  • 1 tsp vanilla extract

  • Pinch of salt

  • ½ cup chia seeds

How You Make It

  1. Add the strawberries to a blender and blend until completely smooth.

  2. Pour the blended strawberries into a large mason jar or container with a tight-fitting lid.

  3. Add the coconut milk, Greek yogurt, maple syrup, vanilla, salt, and chia seeds.

  4. Seal the jar tightly and shake well until everything is fully combined.

  5. Let sit for 10 minutes, then shake again to break up any chia clumps.

  6. Repeat every 10 minutes or so for the first 30–40 minutes until the mixture starts to thicken evenly.

  7. Refrigerate for at least 2–4 hours, or overnight, until fully set.

Notes

  • Too thick? Add a splash of milk - any kind will do

  • Too thin? Add another spoonful of chia seeds

  • Want it sweeter? Add more maple syrup or honey

  • Swap strawberries for raspberries, blueberries, peaches — whatever fruit you like
