Roasted Puffed Butter Beans

Mmmm, butter bean goodness.

If you’re looking for the perfect snack that’s crunchy, salty, and makes you feel like you’ve got your life together (even if you 100% don’t), this is it. These roasted butter beans come together in minutes, use whatever spices you’ve got kicking around, and taste like the love child of a chip and a crouton.

They’re high in fiber, loaded with protein, and totally customizable — go smoky with paprika, herby with rosemary, or spicy with cayenne if you’re feeling brave (I never am). Toss them on salads, soups, or just shovel them straight into your face — that’s how I roll.

The recipe below has no measurements because this is an eye-ball kind of situation. Trust yourself and your eyeball measuring skills. I believe in you!

What Goes In Them

  • 1 can butter beans (lima beans)

  • Olive oil (enough to coat them)

  • Garlic powder

  • Onion powder

  • Dried thyme

  • Nutritional yeast

  • Grated parmesan

  • Salt

How You Make Them

Preheat your own to 400°F. Drain and rinse the can of beans then dump in a bowl. Add the oil and all of your preferred spices. Spread the beans evenly on a parchment lined baking sheet and bake for 20 mins or until they reach your desired crispiness. Try not to eat the whole tray in one sitting!
